I have so far cooked 3 things out of this book the Kale and Spinach fritata, the Cajun Salmon with Avocado Salad and the Quinoa Mexicana – they were AMAZING!!! Thank you so much for this book, I can’t wait to try more!

Ok, so I did try more today, the grapefruit with cottage cheese for brekkie was a triumph…cottage cheese – who knew?
And I also had the mango with sticky rice. One question though, was the coconut milk supposed to be the stuff you find in a can or carton in the world foods aisle or the stuff you find as a cow’s milk alternative? I had the cow’s milk alternative and it tasted nice but my rice wasn’t so much sticky as runny. Have now recommended this book to lots of friends!

Hey Joy! We used coconut milk from a can so it may be creamier that way. The grapefruit and cottage cheese is always a nice surprise…you just have to be brave enough to try it!
